They know this because study after study show that people who are considered attractive are considered to be more intelligent, more socially advanced, more sexually desirable, and generally in harmony with nature. These attributes lead to feelings of attraction, emotional empathy.

The advertisers hope that those feelings of attraction, emotional empathy, and even admiration will be transferred from the model or product spokesperson to their product.

Whether or not these perceptions are true is relevant, because marketing is all about perception.
